How many layers of pastry are in a sausage roll?

Knowing how puff pastry is made, I’m aware there’s a LOT of fat that goes into separating 96 layers. Now I am not a man overly concerned with matters of health.

What’s the difference between shortcrust pastry and puff pastry?

Puff pastry can generally be described as flaky, light and buttery, good for pies and pastries, while shortcrust pastry has a more crumbly, biscuit-like texture which is good for tart or quiche cases. When making a pie, many cooks use shortcrust on the bottom and puff pastry for the lid.

Can you substitute shortcrust pastry for puff pastry?

The two are not interchangeable if you’re looking for the same results, but many recipes can be adapted for either pastry. Puff pastry behaves differently in the oven than shortcrust, and it is usually baked at higher temperatures.

What makes shortcrust pastry short?

By rubbing fat into flour before adding any liquid, small cells of flour coated in fat are formed, giving shortcrust pastry its fragmentary, discontinuous, particulate texture. The more coated the flour cells, therefore, the less well they will bind with their neighbours and the weaker (shorter) the pastry will be.

How do you keep the bottom of sausage rolls from getting soggy?

Use Cold Baking Trays The trays need to be cold when you place the uncooked pastry rolls on them so that they cook evenly in the oven and get a crispy base. Using hot trays will begin to soften and ‘melt’ the pastry before they’re added to the oven – which will lead to soggy pastry.

Can I use shortcrust pastry instead of puff?

Much sturdier than puff, shortcrust pastry is a combined dough of flour and fat, resulting in a crumbly texture, rather than flaky. As it has a much closer crumb structure, it can be used to construct robust cases and exteriors for pies and tarts, and can stand up to both wet and dry fillings.

Can I substitute pie crust for puff pastry?

While you can never truly get the height or flakiness of puff pastry with a pie crust/pie dough, it can be used as a substitute for puff pastry in dishes such as beef wellington. Homemade or store bought pie dough can also be used in place of puff pastry to top pot pies or to make turnovers.

Should you chill pastry before rolling?

Chilling the dough before baking also prevents your crust from shrinking too much in the oven, since the gluten has had time to relax. For the best outcome, remove your dough from the refrigerator a few minutes before rolling it out, so it has time slightly soften.
